CHICKEN ENCHILADASNow let's build enchiladas...
Before you start to build the enchiladas... whip outOlive oil
that Girl Scout motto and "be prepared"! You can fix12 low carb tortillas
this stuff a couple of days in advance and then "whip2 cups cream
it together" for your guests or for a quick supper1 cup chicken stock
after a day of Christmas shopping.1 1/2 cups Jack cheese grated
Okie dokie... prepare the Chile Sauce recipe below andHeat oil in heavy skillet and cook tortillas just a few
refrigerate so it READY. Also, cook the chicken andseconds. Combine the cream and chicken stock until

1/8 cup chili powder (if you like it hotter, add more!)are filled and rolled, pour the remaining liquid over
1/2 teaspoon dried oreganothem. Sprinkle with cheese and bake in a 350°
1/4 teaspoon dried cuminoven until hot and cheese is melted... about 25
1 teaspoon saltminutes.
